COOKING, with your host TBNL.

I tried this new recipe on the grill tonight.
OUTSTANDING!
Best chicken I've made in a long time.
I thought you BBQ folks might like it.

Indonesian Chicken Satay

2 cloves garlic
1/2 cup chopped green onions
1 tablespoon chopped fresh ginger root
1 cup roasted, salted Spanish peanuts
2 tablespoons lemon juice
2 tablespoons honey
1/2 cup soy sauce
2 teaspoons crushed coriander seed
2 teaspoon red pepper flakes (Makes it mildly spicy...add more for more heat)
1/2 cup chicken broth
1/2 cup melted butter
1 1/2 pounds chicken, cut into long strips, about 3/8 inch thick.
skewers

1 In a food processor, process garlic, green onions, ginger, peanuts, lemon juice, honey, soy sauce, coriander, and red pepper flakes. Puree until almost smooth. Pour in broth and butter, and mix again.
2 Place chicken strips in a large resealable plastic bag, and pour mixture over meat. Save some for the dipping sauce. Marinate in the refrigerator for 6 hours, or overnight.
3 Preheat grill for medium heat.
4 Thread chicken strips onto skewers in an "S" shape.
5 Lightly oil preheated grill. Grill for 10 to 15 minutes, until well browned, turning and brushing frequently with marinade. Serve with dipping sauce.

The recipe says it is also good for pork, beef, or lamb. Don't let the chicken "bunch up", make it a loose curvy "S" shape. so all surfaces of the chicken are exposed to flame. Don't be afraid to let the skewers get good and brown, almost charred, to give the marinade a chance to get crispy. I ended up burning a few pieces but the chicken was still moist and tender, due to the marinade covering it.

And you also forgot ... if you use wooden skews soak them in water first so they won't catch fire...
That receipe sounds good... I'll have to try it soon...

Cheese cake (One of my favourite items to make)

2 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
1/2 cup sugar
1/2 tsp. vanilla
2 eggs
1 Pie Crust, I use Graham (6 oz.)

Preheat oven to 325°F. Beat cream cheese, sugar and vanilla with mixer until well blended. Add eggs; mix just until blended.
POUR into crust.
Bake 40 minutes or until center is almost set. Cool. Refrigerate 3 hours or overnight.

Only thing is: nearly 400 calories per serving...
