The Culinary Institute of America has selected its San Antonio campus as the site for the “Latin Flavors, Americas Kitchens” conference.
The conference will be held Oct. 14-16 and will focus on Latin cuisines, the role of Latin-infused flavors in the development of the American menu, and the relevance of Latin street and comfort foods in a time of recession.
The conference will feature the cuisine of Brazil, Chile, Puerto Rico and the sea-border Veracruz region of Mexico. School officials say these regions are at the forefront of Latin-inspired cuisine in America.
The Culinary Institute is working to train the next generation of chefs that will respond to the shifting ethnic composition of America. Latin cuisine is already the fastest-growing ethnic food category and U.S. demographic data projects Latino buying power will reach $1 trillion by 2010.
“Our San Antonio campus is perfectly poised to offer the U.S. food-service industry access to Latin experts who can help operators offer the best of Latin cuisines to their customers,” says Shelly Greishaber, director of education at The Culinary Insitute in San Antonio. “This conference, combined with our Latin cuisines research program, is helping us present cutting-edge content to both our students and the operator community.”
The Culinary Institute of America offers bachelor, associate and certificate programs in culinary skills, professional development and cooking classes for enthusiasts. The college is based in Hyde Park, N.Y. and has campuses St. Helena, Calif., and San Antonio.
